When I discovered that today is National Cake Day in the US, all I could imagine was a glass fridge that stocks unlimited awesomeness. A chocolate truffle for the choco fan, a mango chocolate cake for the fruit lover and a brownie for the cake addict. Bakers will boast of various tricks they use to create perfection in a cake, but for a novice like me baking is a huge deal. Fancy ingredients and recipes are downright formidable, but the recipes that I chanced upon are as easy as melting butter. Here's sharing five delicious and super simple cake recipes that will make you want to bake a cake, even if it is not your forte. Trust me and try these.

Honey Mug Cake: A dull day and depressing weather can easily entice you to reach for cake. If that happens, run into your pantry and prepare this honey mug cake to brighten up your day.

Ingredients:
4 tbsp all purpose flour
1 egg
2 tbsp honey
2 tbsp butter
½ tsp vanilla extract
3 tbsp castor sugar
A pinch of salt

Method:

1. In a big microwaveable mug, add butter and cook in the micro for 10 sec.
2. When the butter is melted, add honey, egg and vanilla and beat well with a thin hand blender or fork. Make sure you have combined everything well.
3. Now add the flour, sugar and salt and combine everything together.
4. Cook in microwave for approximately two minutes on high settings.
5. Remove and check with toothpick if cooked. If not, cook for another 30 secs.

No Bake Peanut Butter Cake: Peanut butter is one of my favourites and I can literally lick it clean off the bottle. So, making a peanut butter cake is kind of exciting. This recipe requires just a few ingredients and is ready in no time.

Ingredients:
A packet salted biscuits
2-3 tbsp sugar
1 tsp salt
5- 6 tbsp butter

Half a bottle of peanut butter (smooth or crunchy)
100 gms peanuts
100 gms fresh cream

Method:

1. In a grinder, mix together the biscuits, sugar and ½ tsp salt. When the biscuits are broken down to fine granules, add butter and mix well.
2. Take a baking dish and make a biscuit layer with the moistened biscuit crumbs. Make sure the biscuits are layered evenly.
3. Place the peanut butter in the microwave for 10 seconds and add in the cream and peanuts.
4. Spread the mixture on the biscuit base. Cover the baking dish and keep in the refrigerator for at least an hour or two.
5. When it sets well, cut into square pieces and relish.

Eggless Oreo Cake: Well, who doesn’t like oreos? Eggless oreo cake sounds so luscious and you’ll be surprised if you read through the recipe. It so easy! Perfect for an instant indulgence.

Ingredients:
1 packet Oreo biscuits (preferably chocolate flavoured)
1 cup milk
3-4 tsp sugar
3- 4 tsp Eno or baking soda (approx 2 packets)

Method:

1. In a mixer, add the biscuits and sugar and grind coarsely. Break the biscuits into small pieces and grind well.
2. Now add milk and Eno and grind again for 15 secs. Make sure you have a smooth paste.
3. Grease a microwavable bowl with butter, oil or parchment paper and pour the orea cake mix. The mix should fall in the bowl like a ribbon.
4. Pat the bowl from the bottom and make sure the mixture has settled well.
5. Microwave for approximately five minutes on high flame. Once done, check if it’s cooked. Do the knife test or use a toothpick.
6. The cake will rise but will not double in quantity. When it’s done remove from bowl by putting it upside down, cut into pieces and enjoy.

Simple Vanilla Cake: Simplicity is our motto, and we’d stick it if unannounced guests arrive. This vanilla cake is a great quick treat to offer your guests a warm welcome. Plus, it tastes wonderful with some tea too.

Ingredients:

200 gms flour
200 gms sugar
120 gms butter
2 eggs
2 tsp vanilla extract
2 tsp baking powder
120 ml milk

Method:

1. In a large bowl, mix sugar and butter swiftly. Break the eggs and mix them in. Make a smooth paste. Add the vanilla too.
2. In the meanwhile, pre heat the oven at 180 degree celcius and grease a baking tray.
3. Now combine the flour and baking powder and add it to the sugar mixture. Mix well to make a smooth paste.
4. Lastly, add milk to the mixture and keep stirring. Pour this mixture in the baking tray and bake for 30 minutes. When done, take the knife test and check if cooked. If not, bake for 5- 10 minutes.

Nutella Almond Mug Cake: Mug cakes have become my favourite. After all they’ve helped me find the baker within. This one is sinful and how!

Ingredients:
2 tbsp nutella
1 egg
4 tbsp almond flour (You can also use all purpose flour if you like)
¼ tsp vanilla extract
A pinch of salt
Choco chips, almond shavings

Method:

1. In a bowl, break the egg and whisk to make a foamy mix. Add nutella to it and whisk to make a smooth paste.
2. Add vanilla extract to it and combine.
3. Now add the flour and salt and mix well to make a batter.
4. Take a large microwaveable mug and slowly pour the batter in it. Fill only half the mug as the cake will rise. Top with choco chips and almond shavings.
5. Microwave for 30 seconds and check if it has overflowed. Continue the process for another 30 seconds and then remove. Check if cooked.
