Have been making these since the recipe appeared in a CL article on their "champion" recipes. We let the batter stand for about 5min before cooking. Berries are a nice addition, same with sliced bananas.

These are amazing! Thick, fluffy, not a ridiculously small portion like some other recipes. I subbed milk + lemon juice for the buttermilk, and served with a warm berry sauce... LOVE. Will def make this recipe again, was quick, easy and delicious, not to mention good on the waistline if you stick to two pancakes.

Excellent! These are super fluffy! I agree with another reviewer: these are not nearly as bad for you (from a caloric standpoint) as some others. Try them if you can. Super yummy!

I had purchased some buttermilk I needed to use before it went bad and came across this recipe... SUPERB!!! Very easy to make and not too much time required for a weekday morning rushing kids, hubby & self out the door. They were very light and fluffy. Will definitely be my go-to recipe for pancakes from now on... and I'm going to try some of the suggested add-ons/ substitutions, too!

Wow, what a delicious pancake recipe, and as pancakes go, not at all bad for you. We dropped fresh blueberries into the batter and ate them plain - no butter, no syrup, just delicious blueberriness..

I love these pancakes! I make them whenever I have leftover buttermilk from another recipe. I usually add blueberries or top them with strawberries or both. They are quick to whip together and turn out great every time.

There is no buttermilk in Paris. Alas I had to substitute crème fraîche of which there is always plenty! I know I could have used yogurt or added lemon to regular milk but crème fraîche made these pancakes exquisite treats! We will walk many miles to compensate for the extra calories. Even with all the marvelous pastry treats in Paris my husband begs for these pancakes on a Sunday morning. A little fresh grated nutmeg makes a nice addition to the recipe too.

I added 1/2 teaspoon of pumpkin pie spice and 2 tablespoons Splenda to the dry mixture instead of sugar. Also added a slivered Granny Smith apple and 1/2 cup of chopped pecans, and 1 tablespoon of Key Lime juice to liquid ingredients. I also used Canola oil instead of vegetable. Delicious!

I thought this recipe was good. I usually use a pancake mix to make pancakes, but I had some buttermilk I was trying to use so I thought I'd give this recipe a try. It came together pretty quickly, and I did like the texture, but I didn't think it was the fluffiest pancake ever. To those who commented that this is not a "light" pancake, I would like to point out that the fat-free pancake mix that I usually use to make pancakes has double the calories, for the same size pancake. This recipe has only 1 teaspoon of oil and 1 egg for 9 pancakes, which is a lot less than other recipes.

This recipe is definitely a keeper. I used whole wheat pastry flour instead of white flour and made waffles. They were GREAT! Best recipe that I have found for homemade pancakes or waffles. Delicious! Very Satisfied!! Two Thumbs Up!!! ((^_^))

Good, basic pancakes, with some adjustments. The batter comes out too thick (at least it did for me) with these measurements and required a lot more buttermilk.

These pancakes are pretty good coming from someone who doesn't like most pancakes! There very moist and fluffy which is always a bonus! I usually mix in some chocolate chips or strawberries to add extra flavor!

Yummy. I will definitely make this recipe again. I used whole wheat pastry flour and egg substitute and sprinkled with frozen huckleberries after pouring them into the pan. They were the lightest, fluffiest pancakes I’ve ever made. I agree with other reviewers that 1 pancake is not enough, but I usually allow myself about 300 calories for breakfast. That is 3 pancakes and is a perfect serving for me.

I've never had a lot of luck with pancakes, but these were just wonderful-- nothing fancy, but a great basic pancake. I added vinegar to soy milk to substitute for the buttermilk, which worked out fine. Served with local maple syrup and an egg on top!
