If you have read many of my posts, you know that I am a picky eater. I realize how ironic it is for a food blogger to be a picky eater who is scared of trying new foods. So maybe I am filling a niche…a food blogger for the scaredy cats! That’s what I’ll keep telling myself anyway. 😉

That being said, I am sure it will shock you to find out that I had never had corned beef before. I had only heard of corned beef and cabbage for St. Patrick’s Day, and as you can guess, I am not a fan of cabbage. So the thought of ever trying corned beef never crossed my mind.

Then Michael went to the store to pick up something for me…and lo and behold, he found a great deal on some corned beef. I had NO idea what to do with a corned beef brisket, so I made him wait on the phone while I did a quick scan of some of my favorite cookbooks. Whaddya know, I found a great recipe. So I told him to go ahead and buy one (it ended up being a $22 piece of meat for $7…score!).

It doesn’t get much easier than this. Two steps, then cover and cook, then slice and serve. Voila!

The flavor is absolutely delicious! I actually LIKE corned beef…well, at least this Easy Corned Beef recipe…who knew?!

Ingredients for Easy Corned Beef {Crock Pot}

  • 2-3 lb corn beef brisket
  • 12 oz bottle chili sauce
  • 1 oz pkg onion soup mix
  • 12 oz can cola

How to Make Easy Corned Beef in the Crock Pot

  1. Put your corn beef brisket in the bottom of your crock pot
  2. Mix together the rest of your ingredients
  3. Pour mixture over your corn beef
  4. Cover and cook on low for 6-8 hours
  5. Slice and serve

  • This was actually the very first recipe I tried in my new 9×13 casserole slow cooker made by Crock Pot.It was the perfect shape and size! I was also pleasantly surprised at how easily the crock cleaned up because we all know I love an easy cleanup crock pot!

Ingredients

  • 2.5 lb corn beef brisket
  • 12 oz bottle chili sauce
  • 1 oz pkg onion soup mix
  • 12 oz can cola

Instructions

  • Put your corn beef brisket in the bottom of your crock pot

  • Mix together the rest of your ingredients

  • Pour mixture over your corn beef

  • Cover and cook on low for 6-8 hours

  • Slice and serve

    NEVER buy a corned brisket at the store that requires a spice packet when cooking. If it requires a spice packet for cooking; it may not have been corned for more than a day or so, or was corned under pressure.
    DO BUY a high quality flat brisket and marinate with with your marinade for 8 to 10 days.
    I’ve used my Grands recipe for about 45 years. Some items (sassafras, mayflower and blood roots) are not available except in select local areas. Pink salt was not available back then. Over time. tried different herbs until it came as close as I could get it. If you would like the marinade please email me

    In all the years I have cooked corned beef in my crock pot, I have never added the flavor packet nor added any kind of sauce. I do, however, put the corned beef in the oven with potatoes and some broth after it has cooked all day. For St. Patrick’s Day, I use the broth to boil some cabbage for my family.

      This recipe is a little different from a traditional corned beef, but I have a recipe where you cook the corned beef in the same crock pot with a packet of potatoes and cabbage on top.     I guess I’m a purist, i havent seen any comment about how the chili sauce affects the flavor of the traditional methid with the packet of spice vs.no spice and using the chili sauce. Does it make the meat spicy? I do believe the lesser amount of liquid would help the overall result of either of the methods over being total immersed in water.

      I have only tried it with chili sauce, but if you can’t use chili sauce, you might try ketchup since it is a similar consistency. I have never tried it though, so I can’t speak to taste. Enjoy!

    Just use the packet included and it cooks wonderful I’ve added apple juice to it to but not necessary. You can put some potatoes/cabbage on top and cook the same time (not on bottom) other wise they have a taste to them. I don’t like that taste myself.Very good next day sliced cold( prefer hot myself) too or make a Ruben sandwich. Yummy

      This recipe calls for regular. I just had my husband pick up a 25 cent can of generic cola at the check out at Ruler. It worked great! Enjoy!

      I didn’t use the seasoning packet for a long time, then decided to try it and just makes the brisket better. Low and slow is the answer to cooking corned beef. Don’t ever put potatoes or cabbage in the broth though, it’ll ruin their flavor.

      We’ll have to give that a try sometime! There was another recipe for corned beef on the same page in the cookbook that called for the seasoning packet, but this one did not. I assume it would change the flavor quite a bit.
