I am a sucker for store samples & I make no apologies for this.

Often I find my next food addiction from store samples.

I fell hard in love with this Coastal Kale Salad from New Seasons Market a few months ago. At first, I thought it was a fluke. The truth is that while I enjoy a good salad, I don’t dream about them or crave them. Sour Patch Kids? Yes. Kale? No.

So, two weeks & over $40 in Coastal Kale Salad later & I knew I had to come up with a copycat recipe. This one is a game changer, my friends.

Why is This Salad So Good?

The lemon & the Bragg Liquid Aminos give this salad the salty tang that makes my mouth water. The mixture of seeds gives my chompers a break from the monotony that is leafy greens. New Seasons uses red onions & that’s my usual go to. We live in Portland, OR and this time of year, the Walla Walla sweet onion is season & they are unbelievable. This post features the Walla Walla onion, but it’s just as good with a regular old red onion.

Picking Your Greens

I use a bunch of kale & just tear it away from the stalk. This is just regular old organic kale from New Seasons. Feel free to use the bagged, pre-washed stuff or any variety of kale. When Costco carried the big bags, we made a huge batch of this salad & it is so easy.

Finding the Right Ingredients

Next, grab a fairly large lemon, Bragg Liquid Aminos, 2-3 cloves of garlic, a red or sweet yellow onion, parmesan cheese, olive oil & a variety of seeds. I’m satisfied with this mix of readily availablepumpkin seeds, sunflower seeds & sesame seeds. New Seasons uses a special type of sunflower seeds & black sesame seeds. After a few store trips, I couldn’t find an exact recipe match, so I went with what I could easily find. And you know what, it’s perfectly acceptable & delicious.

Dress It Up

Make sure your kale is dried sufficiently. That way you won’t have a big watery mess while you’re trying to dress the salad. I throw the kale in a giant bowl. In a separate bowl, I squeeze the lemon juice, throw in about 3 tbsp of Bragg Liquid Aminos, 1/3 cup of olive oil and 2 finely chopped garlic cloves. I beat it with a fork, dump it on the kale & gently mix. This is the most crucial stage so you can make your dressing specified to your tastes. Too lemony, add more olive oil. Want more garlic,add it in.

Parmesan for the Win

If you’re satisfied with the dressing, then gently mix the seeds & onions into the salad. You want to salad to be damp from the dressing so the seeds and onions will stick to the greens. At this point, you can transfer the salad to plates and then top with cheese. If you’re like me,you can never get enough cheese, so I usuallymix the parmesan cheese throughout.

THE VERDICT

I am Really Into This New Seasons Coastal Kale Salad Recipe. This guy is a winner. It’s filling, salty, crunchy & healthy. We usually eat it all right away, but the salad will keep for 1-2 days. Ingredients

  • 1bunch of kalewashed & chopped
  • 1/2large red or sweet yellow onion, finely chopped
  • 1medium-sized lemon, juiced
  • 3Tbspof Bragg's Liquid Aminos
  • 1/3cupolive oil
  • 2cloves garlic, finely chopped
  • salt & pepper to taste
  • 3Tbspsesame seeds
  • 3Tbspsunflower seeds
  • 3Tbsppumpkin seeds
  • As much fresh parmesan as you want!

Instructions

  1. Whisk the lemon juice, liquid aminos & olive oil together, then add in the 2 finely chopped cloves of garlic.

  2. Dress the salad to your liking. Remember, you want it a bit sticky so the seeds will disperse throughout the greens

  3. Gently mix the salad with the seeds.

  4. Grate the fresh parmesan over top & enjoy!
