Popsicles are one of those recipes that is super easy to make, but feels like a real treat every time.
My kids love to eat fruit, but turning their favorite fruits or fruit juices into popsicles instantly turns me into super-mom in their eyes! Bonus points if I can actually turn a dessert into a popsicle, like I did with these strawberries and cream popsicles!
Popsicles are fun, plain and simple. So anything in popsicle format is infinitely more enjoyable to eat. Am I right?
And I'm happy to oblige. Especially since I know these homemade treats are all-natural and contain only wholesome and delicious ingredients, lovingly handmade by moi.
So, this weekend I made my kids a batch of my super tasty strawberries and cream popsicles, and it went down a treat with the whole family!
I also love serving these popsicles as a refreshing dessert or an after school snack, so it's a great recipe to make ahead or to prep over the weekend while you're planning your weekly meals.
Making and eating popsicles however, can be a messy business. Especially if you hand them out to kids...sigh.

Strawberries and Cream Popsicles Recipe
Yield: 8

Strawberries and Cream Popsicles Recipe - an easy, delicious dessert using fresh strawberries that's perfect for warmer days or a summer party!
ingredients:
- 4 cups of strawberries, hulled and cut into pieces
- 3 tablespoon sugar or sweetener of your choice
- 3 tablespoon water
- 1 teaspoon vanilla extract
- 200 ml or 7 fl oz whipping cream
instructions:
- Place the strawberries, sugar, and water into a blender. Blend until well mixed. Set this mixture aside.
- Whip the cream and vanilla together with an electric hand-whisk or with a mixer fitted with the whisk attachment to form soft peaks.
- Transfer the cream to a pourable jug. Add the strawberry puree to the whipped cream and swirl the mixture with a spoon.
- Pour the mixture into popsicle molds and freeze for at least four hours or until set.
NOTES:
You can add small pieces of strawberries to the molds before adding the whipped cream mixture for added texture and color.
