Recipe: 80% Fat Breakfast – Bacon, Eggs, Avocados and Tomatoes with Spicy Mayonnaise (1)Been working with a few clients lately (as guinea pigs!) to test a true ketogenic diet, which is at least 80% fat.

For some out there, it’s pretty easy to get your fats up to 65-70% – it’s that extra 10-15% that leaves them scratching their head.

If there is one thing I can do, and do well, is to manipulate a menu to meet requirements, no matter what it is.

There is a buzz right now all around the internet about being in nutritional ketosis, and using that as a way to either lose weight, or for some, just simply maintain when nothing else worked. I won’t get into the fact that I was doing this with a group of people a little less than five years ago when I was first conducting my high fat experiment.

Suffice it to say that I know I was first. ::giggle::

Even back then I heard a few recurring themes … I can’t get that much fat in a meal … I like my veggies, and I can’t have them on high fat … I want fruit … you get the picture.

I am going to be posting a few menus over the next several weeks that proves you can indeed get high fat, and still, for the most part, have all your favorite things. It does mean some sacrifice as you have to give up a little to get a lot in return. And for some, that means losing weight that rivals being on hCG.

80% Fat Breakfast – Bacon, Eggs, Avocados and Tomatoes with Spicy Mayonnaise

To make the Spicy Mayonnaise, combine the following in a jar and store in refrigerator:

1/2 cup mayonnaise
1 clove garlic, finely minced
2 teaspoons chili powder
1 fluid ounce lime juice

Entire Recipe – Mayonnaise (8 servings):

94g Fat (96% calories from fat)
2g Protein
6g Carbohydrate; 2g Dietary Fiber
39mg Cholesterol; 677mg Sodium; 179mg Potassium

Per Tablespoon – Mayonnaise:

102 Calories
12g Fat (96% calories from fat)
trace Protein
1g Carbohydrate; trace Dietary Fiber
5mg Cholesterol; 85mg Sodium; 22mg Potassium

80% Fat Breakfast – Bacon, Eggs, Avocados and Tomatoes with Spicy Mayonnaise

10 minutes prep
20 minutes start to finish

2 tablespoons Spicy Mayo
2 large eggs, finely minced
2 slices bacon
4 ounces avocado
4 ounces roma tomato
1 1/2 teaspoons butter

Cook eggs in butter. In a separate pan, cook bacon and drain.

Slice tomatoes and avocado, then arrange on plate and drizzle with Spicy Mayonnaise.

Add eggs and bacon to plate, season with salt & pepper as desired.
