I remember when I was a new mom, the world nearly stopped when my baby got sick for the first time. Sure enough the weather turned, and soon enough we were in the thick of cold and flu season. We could talk about cold and flu season without talking about chicken noodle soup. It seems that no matter how sick my kids are, they always want to eat. That can be tricky at times since you don’t want to make them feel worse, so I like to stick to tried and true dishes that are easy on sick tummies like chicken noodle soup.

Ihave a little bit of an obsession with trying out new recipes, combining them with old recipes, and tweaking it all until I finally concoct the one that is SO GOOD that I never need another recipe for that dish again. Well, let me tell you, Homemade Chicken Noodle Soup is D-O-N-E. This recipe is the only one you will ever need. It is so flavorful. It is packed with veggies, noodles, and rich chicken flavor. The best part is that for something so flavor packed, it is so simple to make! I also know it is the best, because I took a special batch over to one of my toughest critics and two bowls and only about 5 minutes later I got the stamp of approval and told to label this one the WORLD’S BEST. The secret ingredient is really the rotisserie chicken for a few reasons. First, I really love the flavor and texture of rotisserie chicken. Using it in place of plain chicken breast already adds to the flavor, but to make it over the top, you start the soup by simmering the whole chicken in the broth. You take the entire chicken, bones and all, and put it right in your pot. This is also how you make chicken broth and why it has so much amazing flavor, so starting the soup off like this gives it a base of incredible flavor.

The other thing that makes this soup a little extra special is the addition of cornstarch. Many of the chicken soup recipes I have tried or created over the years does not have this. The cornstarch helps to bring everything together and makes the broth of the soup just a touch thicker. I think this is great especially when you are sick because it gives your stomach something to hold on to. Sometimes when things are too watery it make me feel a bit nauseous, but when there is a bit more texture and weight it can actually feel a lot more settled on an empty stomach.

Ingredients

  • 1 Rotisserie Chicken prepared
  • 2 cups chopped celery
  • 2 cups chopped carrots
  • 1 large yellow onion chopped
  • 4 Tbsp Butter
  • 1 tsp poultry seasoning
  • 96 oz chicken broth
  • 12 oz 1 package wide egg noodles
  • 1/3 cup corn starch
  • 1/4 cup water

Instructions

  • Place the carrots, celery, onions, butter, and poultry seasoning in a large stock pot on medium high heat and sauté until the vegetables are tender, about 5-10 minutes.

  • Place the entire chicken on top of the vegetables and then pour the broth over the top. Bring the pot to a boil, then reduce heat to low and simmer for 30 minutes.

  • While the soup simmers, mix the cornstarch and water until the cornstarch is completely dissolved. Then at the end of the 30 minutes, remove the chicken from the soup and pour the cornstarch mixture into the broth slowly while continuously stirring. Once it is all combined, stir in the noodles and let them cook 6-8 minutes or until just tender.

  • While the noodles are cooking, remove the chicken meat from the bones and chop it into bite sized pieces. When the noodles are tender, stir the chicken in and mix well.

  • Serve hot and enjoy!
